What the What Wednesday: Readings & Recipes!

Holy legs Batman! Ironwoman Elena and I tackled the stairs at our gym today, all 103. I have no idea how many rounds I did, but it was a straight 50 min. Interesting workout, I’ll let you know tomorrow how I’m wobbling walking. A surprisingly pleasant change in workout.

I think y’all could use a break from my antics. While Obama is “kicking ass” my beautiful pal E taught me, as she often does, to pause and take it all in. We are in fact blessed. Via The Daily What.

I haven’t shared a nom recipe with y’all in a while. This latest recipe comes courtesy of the delish and divine In Good Taste. She has a tasty recipe for “Farmer’s Breakfast Casserole with Low-Fat Mozzarella Cheese.”
One of my besties, Taff, actually attempted this recipe. Everyone LOVED it! Taff said it was super easy to make and she whipped it up for dinner.

Ingredients include:
1/2 pound fresh asparagus, washed, ends trimmed, and cut into 1 inch pieces
1/4 pound fresh mushrooms (or more) washed and cut into half slices
1/4 cup sliced sun-dried tomatoes

Breafast Casserole FTW!

2 cups fresh baby spinach, chopped
1-2 tablespoons olive oil (depending on your pan)
1/2 cup shredded low-fat mozzarella cheese
12 eggs
2 T milk, half and half, or cream
Salt and pepper, to taste

I love it when people find things in magazines or online that they end up loving. Taff said this could easily go into her cooking rotation of fave things.

  1. Looks great! Intense workout with the stairs. Have you ever tried the Jacobs Ladder? Did if for first time with my PT few weeks back, pretty tough.

  2. Oh, that casserole just went right into my dinner plans! I heart BFD (Breakfast for Dinner) 😉

  3. I have a whole bunch of recipes I cut out of my old Real Simple magazines that I want to try out. I’m not usually one to follow recipes, but I have tried a cucumber-lime spritzer to drink last summer that worked really well. It was light and refreshing.

  5. As I travel, I’m starting to realize how fortunate I am too, compared to all the other people in the world. We in America are rather pampered…the very fact that we can obsess over organic or gluten-free or raw vegan is a blessing and a privilege.
